Cornmeal is transformed into polenta when simmered with milk and water. The polenta is served with fresh sage and grated Parmesan. Or it can be made in advance, chilled for 2 hours and then lighlty fried in butter.

Leeks, and red and yellow onions start in this savory, hearty pie. They 're sauteed together with white wine, and then combined with eggs, feta, parsley, tarragon and dill. This luscious filling is then poured into a tart pan lined with bread crumbs. The filled pan is then garnished with sliced tomatoes, and a sprinkling of parsley and bread crumbs. Bake, cut into wedges and serve.

This is an easy and somewhat unusual sidedish of steamed cauliflower and kale with a piquant dressing. You can use ordinary kale, arugula or any other cooking green if dino kale is not available -- be sure to adjust cooking time accordingly.
