Creamy Polenta with Roasted Corn and Fresh Sage

Cornmeal is transformed into polenta when simmered with milk and water. The polenta is served with fresh sage and grated Parmesan. Or it can be made in advance, chilled for 2 hours and then lighlty fried in butter.

This is a labor of love, lots of stirring and timing to get all the ingredients added and the risotto creamy and wonderful. But, it's well worth it. When it's ready, a sprinkling of Parmesan cheese and slivers of basil finish it perfectly.

Leeks, and red and yellow onions start in this savory, hearty pie. They 're sauteed together with white wine, and then combined with eggs, feta, parsley, tarragon and dill. This luscious filling is then poured into a tart pan lined with bread crumbs. The filled pan is then garnished with sliced tomatoes, and a sprinkling of parsley and bread crumbs. Bake, cut into wedges and serve.

I first served this pasta dish with a tossed salad when friends dropped by and stayed for dinner, recalls Amy Burns of Charleston, Illinois. Since then, I've modified it to include some vegetables, so it's a complete meal by itself. My sons ask for it all the time. Frozen peas, corn, chopped broccoli and sliced zucchini can be used alone or in any combination that you like in place of the vegetable medley listed, she adds.

This homemade pizza substitutes goat cheese for mozzarella. You can use the sauce recipe, or use store-bought sauce to make it easier. You can always add any other ingredients - artichoke hearts make a great addition!
