5 slices bacon
2 2/3 tablespoons butter
1/4 cup olive oil
2 tablespoons minced garlic
1 sweet onion, chopped
3 (6 ounce) bags baby spinach leaves
coarse salt and ground black pepper to taste

DIRECTIONS
In a skillet over medium heat, fry the bacon until evenly brown and crisp. Drain, crumble, and set aside.
Melt the butter and heat the olive oil in a large skillet over medium heat. Mix in the crumbled bacon, garlic, and onion. Cook and stir 2 minutes, then mix in the spinach until evenly coated with the butter and oil. Cover skillet, reduce heat to low, and cook 5 minutes, stirring often, or until spinach is tender. Season with salt and pepper to serve.

Very Good, I poured the final mixture over a strainer to get rid of most of the water released from the spinach before serving so that the juices wouldn't run all over the plate.

Very Good. Just like Grandma used to make. Added 2 chopped up hard boiled eggs right before serving just like Grandma. Yum Yum

This was a little oily for us. I will try again using bacon drippings, 3 tablespoons of butter and 2 tablespoons of olive oil.

Yum! Changes I made--I used the bacon drippings instead of draining them off and cut back on the amount of oil used to compensate. I also drained the spinach after cooking as another reviewer suggested and sprinkled the spinach liberally with salt right after adding it. My family loved it--thanks!

This was so simple and tasty. BE CAREFUL!!! If you add the garlic while your pan s too hot you will scorch the garlic making it bitter.
