fresh or frozen tilapia or other whitefish fillets, 1/2 to 3/4 inch thick
egg, lightly beaten
yellow cornmeal or fine dry bread crumbs
lemon pepper seasoning
cayenne pepper, or to taste
Vegetable oil or shortening for frying
Cajun Tartar Sauce:
finely chopped sweet pickles or sweet pickle relish
finely chopped onion
Cajun seasoning, or to taste
Hot pepper sauce

Super yummy and quick.
The only change from the recipe we made was to not add water to the egg. The coating for the fish was really good. The tartar sauce was good, but a little watery.
I couldn't help but give it 5 stars. I used this receipe as a base for 3 flounder fillets I bought. I just didn't want to waste an egg, so I poured some olive oil on a plate and put the fillets in it seasoned with lemon/pepper and salt, flipped it over and did same thing. i then put the fillets in a dish with seasoned panko crumbs and fresh parsley and coated them really well. Added olive oil and some butter to a cast iron pan and cooked the fish for 3 minutes on each side until medium/dark brown and voila. Delicious! The coating was to die for!
