I was in the mood for something hearty but with a different flavour, and this really hit the spot. I added more red pepper and chili powder to spice it up a bit. It tasted even better the second day ... and the third day. (I doubled the recipe.) I served it over brown rice, egg noodles and sweet potatoes -- all good, but I think I liked it over sweet potatoes best. If you're a peanut butter fan, give it a try!
