The wonderful national noodle dish of Thailand, it is now served in many trendy restaurants. It can be adjusted to your taste, add ingredients that you like and make it as spicy or tart as you want to. It is also great as a basis for a stir fry of leftovers. This is a recipe for those who like it HOT, if you can't handle the heat, go easy on the chile sauce.

This is a Pad Thai recipe I got from a restaurant. The sauce is made with ketchup, fish sauce, sugar, lemon juice and vinegar, and it's sprinkled liberally with bean sprouts and chopped peanuts.

Why eat out when the best traditional Pad Thai is made right in your own kitchen? This is the best Pad Thai recipe ever. My father's Pad Thai is better than most Thai restaurants! I like it because of all the fresh ingredients, it is not greasy. It's satisfying and healthy. There is no meat in this recipe.

An aromatic saute of soy-marinated chicken, garlic, ginger and onions is enhanced with mushrooms, cucumbers, bell peppers and carrots, and flavored with peanut sauce, oyster sauce and hot chili sauce. Serve over rice noodles and top with chopped peanuts.
