Directions

  1. Place potatoes in large saucepan; add enough water to cover. Bring to boil on medium-high heat. Reduce heat to medium-low; simmer 15 minutes or until potatoes are tender.
  2. Meanwhile, mix cream cheese spread, sour cream and Parmesan cheese; cover. Refrigerate until ready to use.
  3. Drain potatoes. Cool slightly. Cut potatoes in half; cut small piece from rounded bottom of each potato half. Place, bottom-sides down, on serving platter. Top each with 1 teaspoon of the cream cheese mixture. Sprinkle evenly with bacon bits and chives.

These are pretty tasty and were well received. I made 3 appetizers though and the others were all eaten but there were left overs of this one. Most people commented on how good they were. If I make them again, I'll broil them before topping with the green onions.

The are amazing, I made them for christmas eve as we always have small dishes that day, everyone loved them and I have since made them for many parties and showers. I couldn't find the cream cheese called for in the recipe so I bought the one with onion in it.
