Excellent! I made this for Mother's Day cookout to rave reviews! I followed recipe to a T. I made again to take for lunch. This time, I used colored peppers (on sale, and beautiful!) and added extra can of beans to keep me full for the whole day. Low fat, no regular wheat (used spelt flour due to wheat intolerance) Make a bunch, it can be eaten throughout the week!

This was better than I expected it to be. However, I think I will save this salad for winter when fresh vegetables are not as plentiful.

Pretty good. I omitted the celery and onion (don't care for either one raw), but otherwise followed the recipe as directed. I thought the dressing had just the right amount of sweetness and balanced the vinegar nicely.

An easy and inexpensive salad. I had a 12-0z package of "Italian vegetables" and decreased the amount of dressing by 25%. I used the microwave to steam the vegetables (using a pampered chef pan with drainage holes) and cooked the dressing one minute, stirred, then cooked one more minute in the microwave. (1000-watt oven). The dressing was a little thick, but covered the vegetables and kidney beans nicely. I used frozen red pepper, thawed, celery, and a combo of white and purple onion that was already chopped. The dressing is a little too sweet for my taste, thus the 4-star rating. I'll try decreasing the sugar a bit next time, or possibly just a small amount of Splenda to make this a friendly dish for diabetics.

This was a nice lighter change of pace side. I used a steamable bag of frozen veggies, eliminating (well, making easier) the first step. I detest celery, so I left it out, and I forgot to pick up a green pepper. This was simple, both in preparation and taste. Mr. LTH deemed it "OK" (which is a solid 4 in his world) and I love that it's a fairly low cal & high nutrient (and make aheadable) side. THANKS, Shirley Doyle!

I followed the recipe (I used the flour, sugar, and mustard not the other reviewer recommendations) and it was loved by most of the guests. For the simplicity and taste, I would make this again. My sister LOVED it and was surprised that I used a frozen bag of vegetables since I had fresh chopped celery, green peppers, and onions in it; she thought everything was freshly chopped/cooked. I would add a can of black beans next time for more protein.
