INGREDIENTS
2 tablespoons all-purpose flour
3/4 teaspoon salt
1/8 teaspoon pepper
3/4 pound boneless beef chuck roast - cut into 1 inch cubes
1 tablespoon vegetable oil
1 (10.75 ounce) can condensed tomato soup, undiluted
1 1/4 cups water
3/4 cup chopped onion
1/4 teaspoon dried basil
2 medium potatoes, peeled and diced
2 medium carrots, cut into 1 inch pieces

DIRECTIONS
In a resealable plastic bag, combine the flour, salt and pepper. Add beef cubes, a few at a time, and shake to coat. In a Dutch oven, brown meat in oil. Add the soup, water, onion and basil; mix well. Cover and bake at 350 degrees F for 1 hour. Add potatoes and carrots. Bake 1 hour longer or until meat and vegetables are tender.

Delicious! I doubled the recipe, mainly the meat & veggies, because I am feeding a family of 5. I did only have 1 can of tomato soup. After the first hour of cooking the meat I added extra water & on the stove top I boiled about 1/2 c water with 2 Beef Bouillon cubes and added this to the rest of the recipe. I also like corn so I added a can of corn, drained. I cooked mine longer than recipe says because I didn't have my stew meat & veggies cut up very small. Add cornbread & it was a delicious filling meal for a cold night!

I loved this stew! I am going to make it again today, but double it and add a can of corn. The 1st time I made it - i should have added some water because the meat and veggies absorbed most of the tomato soup. I was amazed at how great this tasted using a can of tomato soup!

This is my second time to make this recipe. I love it because it is absolutely easy, delicious and hearty. The exception I made was I did as another poster did and added all my vegetables at the beginning. Also cooked it in a slow oven so all the flavor good savor. The smell was just awesome!

This was wonderful!! I did make a few very small changes. First I doubled everything. After browning the meat I added about 3/4 cup red wine to the pan and let it simmer about 5 minutes. I added a clove of garlic to the soup mix as well as a little boulion and stired the mixture a couple times. Like suggested I also added corn and a little more water when I added the rest of the veggies. This will be a family favorite for years to come.

Good recipe. I doubled it, used stew meat and after browning the meat I threw everything in the pot and baked for two hours - it was simpler and tasted great.

My 13 year old son has been bugging me for stew and my Mom never made a really good one. I found this recipe and really had just about all the ingredients at home! My son LOVED it! Instead of carrots, I substituted a bag of organic veggies (peas, carrots and corn). I thought this was super easy to make and will do so again!

I made this primarily for my husband who loves dishes like this. I bought already-cubed stewing beef, rather than a roast, and sauteed it in EVOO. Added 1/4+ tsp garlic powder to the sauce; used low-sodium tomato soup, & subbed low-sodium beef broth and 1/4c dry red wine for the water, adding in an extra 1/2-3/4c broth to avoid the dryness problem that some reviewers commented on; also cut my potatoes in larger chunks so they wouldn't get soggy and soak up more of the liquid. Served with homemade sourdough French bread. Thank you for sharing your recipe, Ruth!

This was great! So easy and very simple ingredients. I used low sodium tomato soup and then added some cajun seasoning in with the spices: I also added more water when I added the vegetables. My husband loved it (and he's a great cook!). I will be making this often! Thanks for sharing!

This was SO delicious!! My husband and I loved it and we think it was even more tasty the next day. I doubled the recipe and added the following modifications: 1/4 t garlic powder and 1 smashed beef bouillon to the meat seasoning. I also took a suggestion from another review and after one hour of baking, I added 1/2 cup of water mixed with one additional beef bouillon and a can of drained corn. Mmmm. This was really good!
