INGREDIENTS
2 medium potatoes, peeled and cubed
2 tablespoons lemon juice
5 1/2 teaspoons olive oil or vegetable oil
1 garlic clove, minced
1 1/2 teaspoons minced fresh oregano
1/2 teaspoon salt
1/8 teaspoon pepper

DIRECTIONS
In a bowl, combine all of the ingredients. Transfer to a greased 1-qt. baking dish. Bake, uncovered, at 425 degrees F for 45-50 minutes or until tender, stirring twice.

To make cooking time a little quicker, I par-boiled my potatoes first and then proceeded with the recipe. I also added garlic and onion powders and some fresh parsley. Everyone loved the hint of lemon flavor. Thanks Carole!

I loved these potatoes! Served with Greek pork tenderloin (from allrecipes.com) and tzatziki. Used fresh oregano, and parsley. Really enjoyed the zingy lemon flavour!

These are a hit in my family. I have been searching for a recipe close to the potatoes at Jimmy The Greek restaurant. Try par boiling the potatoes first in chicken stock for a more intense flavour. This recipe is the closest I have come to them.

Absolutely delicious with the perfect amount of lemon for my taste. I used new potatoes & left the peel on, added a bit or dried rosemary & thyme. These potatoes were so easy to make & yummy.

I did double the potatoes and kept everything else the same, sprayed the pan with non stick spray and had no trouble with the potatoes sticking. Family loved them.
