These muffins have a great intense orange flavor and were easy to make. I used cara cara oranges, using only the zest instead of the whole peel. I also substituted currents for the raisins and increased the amount to 3/4c. For the butter, I only used 2Tbsp, substituting apple sauce for the rest. They were moist and very yummy.

I really like this recipe. Really easy to make and very tasty. I'll definitely make it again, but I think I'll only include about half the orange peel in the blender mixture, it was just slightly bitter.

I usually follow the recipes as are the first time, then experiment with them for better health options afterward, this time I chose to make changes right away. Instead of 1 1/2 c. flour, I used 1/2 cup white flour, 1/2 cup wheat flour & 1/2 cup ground flax. I used 1/3 cup egg substitute in place of the egg and additionally, I used dried cranberries in place of the raisins. At first taste - ugh, I wasn't thrilled. But I added some honey onto the muffins & wow, what a difference! You can't beat how easy it was to make, even though the taste wasn't exceptional. I will try again following the original recipe just for comparison sake. I don't want to give a star rating, as I made some significant changes to the outcome of the original recipe's flavor, but I don't know how to submit these comments otherwise.

Awesome. I just bought a heavy duty food processor & I am happy to report it shredded the naval orange into tiny pieces. Delish! Used cranberries & apricots in place of raisins. I will be making this recipe often. Thanks!

These are yummy....I used dried cranberries instead of raisins for a "cranberry orange" type of muffin. Keep an eye on the time....since the temp. is so high, mine didn't take as long to bake. Make sure you thoroughly grind the orange as the recipe states. :)
