INGREDIENTS
1/4 cup lemon-lime soda
1/4 cup orange juice
1/4 cup Dijon mustard
1/4 cup reduced-sodium soy sauce
3 tablespoons honey
2 tablespoons minced gingerroot
6 (4 ounce) skinless, boneless chicken breast halves

DIRECTIONS
In a small bowl, combine the first six ingredients; mix well. Pour 3/4 cup marinade into a large resealable plastic bag; add the chicken. Seal bag and turn to coat; refrigerate for 45 minutes. Cover and refrigerate remaining marinade for basting.
Coat grill rack with nonstick cooking spray before starting the grill. Drain and discard marinade from chicken. Grill, covered, over medium heat 5-6 minutes on each side or until juices run clear, basting occasionally with reserved marinade.

Nutritional Analysis: 1 chicken breast half equals 153 calories, 2 g fat (trace saturated fat), 66 mg cholesterol, 402 mg sodium, 6 g carbohydrate, trace fiber, 27 g protein. Diabetic Exchange: 3 lean meat.

This was well-liked by 8 out of 9 people it was served to. Next time, I will add a bit of olive oil to the marinade to keep it from sticking to the grill.

We made this and it might have just needed more time to marinate to make it more flavorful. The marinade itself tasted good it wasn't so noticeable on the cooked chicken.
