Great recipe! Very firm but moist! I made some without dates for some picky people, and they also loved them. I prefer the dates in, though.

I really liked this recipe! I felt like I could battle a cold with these muffins alone! The instructions were a little confusing though. You state to reserve the peel and put it in the processor. After thinking about it a second I pulled the peel out of the processor and just left in the grated peel that was in the ingredient list. They turned out lovely. If I was supposed to leave the whole peel in, let me know. But they were great with out it! :)
