INGREDIENTS
1 3/4 cups all-purpose flour
2/3 cup packed brown sugar
2 1/2 teaspoons baking powder
1/4 teaspoon salt
1 egg
3/4 cup orange juice
1/2 cup sour cream
1/4 cup vegetable oil
1 tablespoon grated orange peel
1 1/2 teaspoons vanilla extract

DIRECTIONS
In a large bowl, combine the dry ingredients. In another bowl, beat the egg, orange juice, sour cream, oil, orange peel and vanilla. Stir into dry ingredients just until moistened. Fill greased or paper-lined miniature muffin cups two-thirds full. Bake at 350 degrees F for 18-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks.

I made these to include in a muffin basket. They were so good! I tried a second recipe for mini muffins developed by a professional chef, and these were way better. Thanks, Amy!

EXCELLENT muffin. For an extra tasty muffin, i used the orange icing drizzle recipe from the mini pumpkin muffins. We love these and make them all the time!!!

These muffins smelled incredible when they were baking but I found the taste to be quite bland. I took the advice of one of the other reviewers and used orange icing drizzle on top, which helped the taste a bit, but I still doubt I would make these again.

These were good and very moist, but I felt they were missing something. They were more cakey than muffin like in texture. I may try adding white chips and a glaze and making cupcakes out of them if I try them again.

delicious; light and puffy with just the right amount of orange flavouring. the only change i made was to use all wheat flour, and they came out just as good.

These were tasty, but kind of plain looking and flat on top. There is a lot of baking soda in this recipe so you think they would have risen?! I put in raisins as I had some to use up in my baking cupboard. Overall nice to eat, but pale and plain looking.
