I found this recipe while vacationing in Florida in the late '60s. I made a few changes and added lime juice for extra tartness. It's colorful, refreshing and looks so pretty on the plate. -June Nehmer, Las Vegas, Nevada

This is a real made-from-scratch pie, so get out your double boiler. The lemon filling is smooth and thick with lots of egg yolks, butter and lemon juice. And the meringue has a bit of lemon juice whipped in.

First you make real lemon custard studded with bits of lemon zest. Then you whip up the meringue. Half the meringue gets folded into the filling, and the other half gets spooned on top of the pie.

Mom's Chocolate Meringue Pie

Rich, creamy and very chocolaty, this pie 's ingredients are simmered slowly on the stove until they perfectly blend and the filling is thick and ready to pour into a pie shell. The chocolate custard pie is topped with a glossy meringue and slipped into the oven.

Chocolate Meringue Pie

The lovely chocolate custard filling in this pie is creamy and very chocolaty. It 's cooked in a double boiler until pudding-thick, poured into a baked pastry shell, and slathered with meringue. After six minutes in a hot oven, it 's ready to serve.

Rhubarb Orange Cream Pie

Diced, fresh rhubarb is folded into a delicious concoction of strawberry gelatin, orange juice concentrate, egg yolks, butter, sugar and flour. A sweetened meringue is carefully folded into that, and then the filling is spooned into a prepared crust and baked. Garnish this lovely pie with twists of orange rind and dollops of whipped cream.

Vinegar Pie III

For this old-fashioned pie, lemon extract is added to the cooked and creamy vinegar custard just before it 's poured into the waiting crust. Lots of egg whites are whipped into a meringue and piled on top of the filling before it 's baked.
