The 3 stars is for prep time andtaste of hens - would give 5 stars for the rice. Unless i am a very slow chopper the time needed to chop prep saute and cook rice was too much for something that was just kind of good. Everyone did love the rice. I cooked 4 hens for the 49 mins uncov. then 40 mins covered and they needed an add'l 35 mins till the juices ran clear.

Excellent dinner... I made extra rice for the side as I usually don't eat stuffing and it was delicious! Easy recipe and I had all the ingredients on hand, easy pantry staple dinner!

I'm giving this recipe 3 stars because the cornish hens were so-so. However, the rice is fantastic. My advice - do not ruin the rice by stuffing it in cornish game hens! It is easy to make and compliments many main dish meals. Tonight I served it with bar-b-qued teriyaki steaks. Delish!

Loved this recipe! The only change I made was, on an impulse, I added a handful of dried cranberries to the rice just before stuffing the hens. Because I love my pepper, next time I will add fresh ground pepper to the rice and on top of the hens to give it a little kick. But this recipe is delicious and I'll definitely use it again.

I scaled this recipe back for 2 servings (i.e. 2 cornish hens) but the cooking time was the same. I didn't have almonds so I used walnuts instead, and I didn't have celery. Even still, this came out great! The chicken was moist and the rice was very flavorful; I used fresh-squeezed oj from the orange I used for the zest. It got the thumbs-up from the husband - I will make this again. Thanks for the recipe!!

We had a dinner party and everyone thought the hens were outstanding. The only thing I will change the next time I make this is I will add some mushrooms to the filling.

I would try a bit of orange juice for the rice, instead of the peel. But honestly, even with the peel, this recipe gets five stars. FANTASTIC!

It was not to my liking. I had such high hopes it would be good. I don't understand how this got so many great reviews.... Maybe I did something wrong, but I don't see how when I did it step by step just like the recipe called for.

I agree... the rice is awesome. Great recipe... This was my first time working with cornish hens and it couldn't have turned out better. Great christmas meal with asparagus and homemade bread! Chicken was very, very juicy! Definitely recommend it!

I made this for our christmas dinner. My husband and i liked it very much, especially with the added notes for the other reviewers. The rice was especially delicious. I used a wildrice mix and added dried cranberries to the rice. It was an awesome combination with the orange zest! We also added a cranberry white wine sauce on top of the cornish hens after taking them out of the oven. It was beautiful and very tasty. I would do it again.

Outstanding glaze, I used the same mixture on pork chops. Delicious! Add some crushed cloves and a pinch of cinnamon for more of an autumn taste.

This was good! I think I'll leave out the orange peel next time. There was also far too much rice to fill the hens, but that's okay because we just ate it on the side. This was really good otherwise!

Made this for Easter dinner & it turned out great. I followed the recipe exactly except I also threw in some baby carrots in the roasting pad for an easy side dish. My kids loved the rice.

The rice is exceptional. I recommend adding a little garlic, sald, pepper and a little thyme to the hens to give them a little kick. Note that the recipe saids "cooked" rice so 3 cups raw does not equal three cups cooked!

I give the hen 3 1/2 stars and the rice 4 1/2 stars. The rice was AMAZING. I used Thai Jasmine rice. The combination of the aromatic rice with the orange zest was just the right combination. My fiance said the hen was okay, it needed a little more pep. I would probably make the hen again; I will definitely make the rice again.

I've made this recipe with cornish hens and a chicken and it never seems to hit the spot. But I DO LOVE the rice! I kept the rice recipe to serve with other chicken dishes. My husband and kids couldnt get enough of the rice. I cook it on the stove and serve without cooking any more in the oven. It's DELISH!

Good recipe but a little too orangeey tasting for my family. The chicken was very moist. If I make it again, I will probably leave out or not use as much orange in the rice. I have enjoyed an orange marmalade better as a glaze for the hens. Thanks for sharing!
