Ingredients

  • 1 1/4 cups whole wheat flour
  • 1 cup all-purpose flour
  • 3/4 cup packed brown sugar
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 eggs
  • 1 cup orange juice
  • 1/3 cup butter or stick margarine, melted
  • 3/4 cup chopped dates
  • 1/3 cup chopped walnuts
  • 1 teaspoon grated orange peel

Directions

  1. In a bowl, combine the dry ingredients. Combine eggs, orange juice and butter; mix well. Stir into dry ingredients just until moistened. Fold in dates, walnuts and orange peel. Coat muffin cups with nonstick cooking spray or use paper liners; fill two-thirds full with batter.
  2. Bake at 400 degrees F for 15-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.
