I loved the basic corn muffin ingredients with the flare of orange. I made them just as the recipe suggested and they were great when served warm with melted butter.

I made mini muffins with cornbread mix and a generous amount of orange extract. They tasted just like the Howard Johnsons Orange Toastees!

I would rate this higher, but I made a lot of changes to this recipe and it turned out delicious- light, moist, and refreshing orange flavor. We make a lot of muffins for a portable breakfast for my 3 yo son, and DH. I used 1 cup bisquick, reduced baking powder to 2 tsp,reduced sugar to 1/4 cup. I also substituted applesauce for the oil, and used 1/2 cup milk and 1/2 cup OJ. After filling the muffin cups drop 1/2 tsp jam in each (blueberry and strawberry were good:)

WAY too bitter! I don't know if it was the 4 tsp. of baking powder, or the tablespoon of orange peel. I think 1 TBSP is too much orange peel. I didn't get any of the white bitter pith, just the zest, but it was way too bitter. Maybe more sugar was needed in this recipe. Or maybe less baking powder.
