INGREDIENTS
1/2 cup butter (no substitutes), softened
1/2 cup confectioners' sugar
1/2 teaspoon grated orange peel
1/2 cup all-purpose flour
1/4 cup cornstarch
1 cup flaked coconut

DIRECTIONS
In a mixing bowl, cream butter and sugar. Stir in orange peel. Combine flour and cornstarch; add to creamed mixture. Shape into 1-in. balls, then roll in coconut. Place 2 in. apart on ungreased baking sheets. Bake at 350 degrees F for 14-16 minutes or until coconut is lightly browned and cookies are set. Remove to wire racks to cool.

This recipe does not use eggs.

These were easy to make. I got 8 cookies out of the recipe. Baked up nice and looked good. I hoped for a bit more flavor, but still enjoyed them. Maybe a pinch of salt or vanilla next time?

These cookies are very crisp, light, and delicious! The recipe is small so you may want to multiply it....by 10!
