Orange-Chip Cranberry Bread
SUBMITTED BY:
Donna Smith
"Tart berries, crunchy nuts and sweet chocolate are simply scrumptious when mixed together in this easy quick bread. Sometimes I'll top it off with an orange-flavored glaze."

DIRECTIONS
In a mixing bowl, combine the first five ingredients. In another bowl, combine eggs, oil and orange peel; mix well. Add to dry ingredients alternately with buttermilk. Fold in cranberries, chocolate chips and walnuts. Pour into two greased 8-in. x 4-in. x 2-in. loaf pans. Bake at 350 degrees F for 55-65 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks. If glaze is desired, combine confectioners' sugar and orange juice until smooth; spread over cooled loaves.

This bread was delicious. I omitted the chocolate chips and made a glaze of 4 T. melted butter, 2 cups confectioners sugar, and about 1/4 cup orange juice, plus some grated rind.

This is a nice, light bread. This is a large recipe, so I halved it and baked it in an 8x8 pan. 25 minutes was perfect. I didn't have buttermilk so I soured milk with orange juice concentrate. Next time I make this I will add orange extract to the bread and glaze to give it more of an orange flavor. Other than that, this was a great recipe.

Better without the chocolate chips, they seemed to overpower the orange and cranberry flavors. Otherwise, very good.

i think the chocolate chips were too much for the cranberry flavor. I will make this again but without the chocolate chips. The orange and cranberrys were a nice combo.
