Orange Chicken
SUBMITTED BY:
Betty Sexton
"I found this recipe several years ago while looking for a new way to prepare chicken. My husband, daughter and I live on a small farm in the mountains of north Georgia. This has become our favorite evening meal dish."

Good-but needed some changes. Here is what I did: Instead of 1 Tablespopon orange zest- I used about three, Then I used about I tsp zest of a lemon also. When I added it into the stuffing mix, and then put the entire mixture into a mini chopper until it was fine. (this way the breading stays on the chicken better). Also in the breading mixture I added 1.5 tsp cayenne pepper, 1 tsp dried red pepper spice, and 1 tsp course black pepper. When the chicken was in the oven- I drizzled it with some freshly sqeeezed orange juice. Came out very good! Sweet- with a little kick. Oh-I also felt the herb seasoning stuffing to be overpowering- so i used half chicken stuffing mix chopped w/ half herb.

This chicken dish was quite interesting, & I enjoyed it very much. It was also easy to prepare. The orange taste was a more subtle than I expected, but that could be b/c I didn't measure the amt of orange juice or zest - I just fresh squeezed one orange and used its zest. I cut the butter by about half, and the chicken was still juicy. Instead of the method described in the recipe of flipping the chicken on top of the melted butter, I think I will mix the melted butter in with the egg and orange juice mixture next time. I felt the mixture was too watery anyway and flipping the chicken was hard to do without losing a lot of the breading. Instead of paprika I added freshly ground black pepper & I used shake n bake seasoned bread crumbs b/c that's what I had. I also baked at 400F for about 30 mins.

Really good...nice subtle orange flavor. I suggest upping the OJ and zest if you want a more pronouced orange flavor, but it's good as is. I used half Panko crumbs and half stuffing mix, added garlic powder to the breading mixture and baked at 400 for 30-35 minutes. Yum. Thanks!

I made this recipe for myself one night, and I absolutely loved it! The orange flavor is just right with the chicken- not too faint, and not too overpowering. The chicken came out juicy and moist, and the coating was crispy. I did use breadcrumbs instead of crushed stuffing mix, though.

My family really enjoyed this recipe. I used seasoned bread crumbs since that is what I had on hand, but will try the stuffing next time. The breadcrumbs turned out a little soggy and I think the stuffing would hold up a bit better.

Both my boyfriend and I really liked this. I took some other members advice and added a little cayenne and black pepper. I also used a fresh orange for the juice. I had some trouble getting the breading to stick so I just poured it all into a pan. Was still really great though. Will definitely make this again.

Very tasty! If you want more of an orange flavor use orange juice concentrate instead of premade orange juice.

My husband and I really liked this chicken recipe. I didn't have stuffing mix available, so substituted Italian bread crumbs instead. The orange flavor was just right and didn't overpower the chicken. Will definitely add this to our list of favorites!
