Onion Tarragon Shrimp

Ingredients

  • 2 medium onions, finely chopped
  • 4 garlic cloves, minced
  • 2 tablespoons olive oil
  • 2 tablespoons minced fresh tarragon
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 1/2 pounds uncooked medium shrimp, peeled and deveined
  • 2 tablespoons lemon juice

Directions

  1. In a large nonstick skillet, saute onions and garlic in oil until tender. Add the tarragon, salt and pepper; saute 1 minute longer. Transfer to a large bowl and let cool. Add shrimp and lemon juice to onion mixture; let stand for 30 minutes.
  2. Place shrimp on a foil-lined broiler pan; spoon onion mixture over shrimp. Broil 3-4 in. from the heat for 3-4 minutes or until shrimp turn pink and topping is browned.
