Onion-Roasted Potatoes
SUBMITTED BY:
Schelby Thompson
"Slightly crisp on the outside and tender on the inside, these potatoes are a hit with the family. This side dish is one of my favorites because the soup mix glazes the potatoes so nicely and it's very simple to prepare. -Schelby Thompson, Winter Haven, Florida"

I usually roast these at about 450 degrees for a half hour and stir them every 10 minutes or so.

I've been making these for years, I bake uncovered and stir twice while cooking. They're also excellent wrapped in foil and cooked on the BBQ. My kids love the "little crunchy things" so much, I often dice an onion and add in order to have more "crunchy things"-- Don't tell them it's onions!

I needed an easy potato dish like this but didn't have any onion soup mix so I used some sliced onion (about half a medium one) and Lawry's seasoned salt. Love it!

I made this with a packet of Ranch soup mix instead of onion soup and we loved them. I broiled them at the end for about 10 min. to get them to brown and threw a little shredded parmeson on top too.

Used olive oil instead of vegetable oil. This was good. but not my favorite way to make potatoes. Don't think I will try it again.

Great potatoes! Just like with all the other oven roasted potatoes I've made recently they are great lukewarm. I have a hard time putting the leftovers in the fridge, I just stand there and eat them. Oh well. I did change up the baking instructions. I baked them at 375 in a shallow foil-lined pan, uncovered for about 35 minutes, tossing once or twice.
