This is so easy! Stuffing peppers is a pain! I use either ground turkey or ground pork (our new favorite) in place of beef. I also add some shredded mild cheddar. And no instant rice here. Regular rice with extra water and a bit longer cooking time. I tend to go by consistency rather than a clock. Taste it to see if the rice is done. Nothing worse than timing something according to the recipe and finding it's not quite done after you've already dished it out! My husbands asks for this recipe quite often! You could use brown rice too, but takes longer too cook. Think I'll try that tonight~~~

Very good and so much easier than regular stuffed peppers. It definitely is "tomato-y" in flavor and could use more spices. Next time I will try adding a tsp. or so of Italian seasoning. Overall though, great recipe!

I found this to lack flavor. Peppers were stll somewhat hard and rice didn't fully cook. Had to put it back on the stove for another 10 or 15 minutes.

Much easier than the old fashioned way of stuffing the pepers. I did cut back on the amount of perrpers recipe suggested and also used a red pepper as well as a green. Will make again.

This was a really good recipe. I had some green bell peppers that I needed to use and thought stuffed peppers sounded good but turning on the oven when it's 100+ degrees outside was a no no. I ended up using turkey sausage, basmati rice, a diced onion, a 28 oz can of diced tomatoes with a few fresh diced tomatoes on top of that, more spices and grated parmesan cheese. Everyone (but a picky niece) thought this was a keeper.

Trying to use up some green pepper so I made this for dinner tonight. Boyfirend & I liked this one. It was easy to make and quite tasty. The only changes I made were I used an extra 1/4 pound of ground beef, a 28 ounce can of petite diced tomates, and substituted grated Parmesan for the shredded, since these were the ingredients I had on hand. Next time I till try the shredded Parmasean but would not change anything else I did.

I had this recipe saved for quite sometime and had been wanting to make it then I saw someone comment that this needed some cabbage. I had some cooked cabbage to use up so I added it while i was waiting for it to boil, i discovered last minute that i didnt have instant rice so i used regular but i added an extra cup of water and cooked for 15 minutes more. I only used one can of the diced tomatoes and i added a chopped onion. It tasted just like stuffed cabbage without the hassle of making the rolls!!! I think next time i would add another 1/2 pound of ground beef to it. Thanks for the recipe!!

Ok, I changed a few things with this and it came out great. I used mild Italian turkey sausage instead of the ground beef. 1 can of diced tomatoes and 1/2 can fire roasted diced tomatoes with chili peppers. I also used 1 red 1 yellow and 1 orange for the bell peppers. Super hearty! So yummy!! My 4 and 6 year old approve. Anna, SoCal

I agree that it was a tad heavy on the tomatoes & I think I'd actually prefer stewed tomatoes over the Italian. I feel the flavor fell a little flat. This recipe screams for cabbage too, imo:) Good, just a little bland.
