Get your measuring cup ready because this recipe is true to its name. There 's a cup of fruit cocktail, mandarin oranges, pineapple chunks, marshmallows, and sour cream. And if you 'd like it a bit sweeter, you can add some shredded coconut. Chill and serve to eight.

Denise Salad Number One

Spicy arugula is tossed with succulent mandarin orange segments, tangy goat's cheese, crunchy sunflower seeds and sweet yellow bell peppers in this elegant and flavorful salad. You can substitute blue cheese for the goat's cheese, if you wish. I usually like to top this with a simple vinaigrette of fresh basil, apple cider vinegar and olive oil.

An unusual, flavorful dressing that will perk up any fruit salad, this is sweet, spicy, and creamy dressing made with eggs, mustard, marshmallows and cream. Odd-sounding combo, but famously tasty result.

Ole! Make it mild or make it zesty, you can have it your way. Always a hit and easy as can be.

This is my super easy version of a salad I had at a restaurant in Chicago. I usually only cook for one, but this would be easy to make in a larger batch for more people.

I FREQUENTLY choose this easy and elegant salad when planning a menu. The flavors blend nicely as it refrigerates. Also, it's nice to have the salad ready when you're busy with last-minute details of serving an entire meal. -Karla Retzer, Grantsburg, Wisconsin

With a novel twist on the traditional preparation, this version of ambrosia salad has a cooked dressing and tosses pineapple, mandarin oranges, and shredded coconut (optional) with rice-like orzo pasta and whipped topping.
