LOVED this recipe! Shared it with a baker friend who couldn't tell it was cottage cheese. It probably won't "fool" die-hard cheesecake lovers since it's not as dense, but I found the taste and texture excellent and so easy to make. I had to leave out the vanilla the first time since I had none, but otherwise followed the recipe exactly.
Made a second attempt, and tried to do it gluten-free for a friend. I left out the flour altogether and used less milk, hoping it would even out, and I used (too much) almond extract instead of the vanilla, and it wasn't as good. The taste wasn't bad, but somehow the GF grahama crackers got really sticky and almost burned, and the cake part was flatter and not as tasty. I'll stick with the original from now on!
