Ham and Onion Pie

The filling for this double-crust pie is hearty and delicious. Lots of Jarlsberg cheese and sliced baking potatoes are layered with ham, onion and garlic. A rich egg-cream mixture is then poured over the layers and the finished pie is popped into the oven to bake up crusty brown.

A light dinner of Vidalia onion pie, a nice salad on the side, and a ice cold glass of homemade lemonade is perfect for hot summer nights! Optional additions can be sweet red pepper to the onions as they cook and/or crumbled bacon or fresh ham bits may be added to the mixture prior to baking. All versions are great! If desired, a couple Vidalia onion rings look great on the top of the pie for decoration!

I found the basic potato pie recipe in a cookbook and added the sweet onions, for which our area is famous. I've used this recipe for brunches and as a side dish for a main meal.

German Zwiebelkuchen (Onion Pie)

Zwiebelkuchen is an onion pie from Swabia, in south-central Germany. It is a special time of year, in the fall, when the mom & pop winemakers will open a BasinWirtschaft in their barn or garage. They serve the new wine, fresh zwiebelkuchen, and perhaps some wurst, for a minimal fee. A few tables are set up, and they are open when they have time to serve. To indicate they are serving, they will hang a straw broom over the doorway. The combination of the onions and the 'green ' wine can have explosive consequences later on!

DURING my teen years, I lived on my aunt's farm in Illinois. This was one of her delicious dishes, and one of many I enjoyed. I'm so happy I got the recipe and later made it my own family's favorite. A chunky fresh tomato topping is served over this rich seafood pie. In place of salmon, 3 - 6 1/2 oz cans tuna, drained, and flaked can be substituted. 

Red Leicester Pie

One pound of Red Leicester cheese is grated and stirred into this savory pie's filling. Chopped tomatoes, onion, Worcestershire sauce and a nice mustard is stirred in as well. The filling is then spooned into a homemade pastry crust, topped with a second pastry crust and baked.
