Old Hermit Cake

"This recipe is over 100 years old and it tastes like hermit cookies. Use only butter in this recipe."

Original Recipe Yield 1 tube cake
 

Ingredients

  • 2 cups butter, softened
  • 3 cups packed brown sugar
  • 6 eggs
  • 1 lemon, juiced
  • 4 teaspoons vanilla extract
  • 4 1/2 cups all-purpose flour
  • 4 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon salt
  • 3 cups dates, pitted and chopped
  • 3 cups chopped walnuts

Directions

  1. Preheat oven to 275 degrees F (135 degrees C).
  2. Cream butter and sugar together well. Beat in eggs one at a time. Mix in lemon juice and vanilla. Add remaining ingredients. Stir well.
  3. Turn into greased and floured 10 inch angel food tube pan. Bake in oven for about 2 1/2 to 3 hours until an inserted wooden pick comes out clean.

For as long as I can remember, my grandmother made hermit cake at Thanksgiving and Christmas....
