INGREDIENTS
1/4 cup all-purpose flour
1 cup sugar
Dash salt
2 cups milk
3 egg yolks, beaten
1 1/2 teaspoons vanilla extract
1 1/4 cups flaked coconut, divided
1 (9 inch) pie shell, baked
MERINGUE:
3 egg whites
6 tablespoons sugar

DIRECTIONS
In a saucepan, combine flour an sugar; add salt, milk and egg yolks. Mix well. Cook over medium heat, stirring constantly, until mixture is thickened and bubbly. Reduce heat; cook and stir 2 minutes more. Remove from the heat; stir in vanilla and 1 cup coconut. Pour hot filling into pie shell.
For meringue, beat egg whites in a mixing bowl until soft peaks form. Gradually beat in sugar until mixture forms stiff glossy peaks and sugar dissolves. Spread meringue over hot filling. Sprinkle with remaining coconut. Bake at 350 degrees F for 12-15 minutes or until golden. Cool. Store in the refrigerator.

Being from the South I have had my share of great coconut pies and this recipe is definitly a great one! I made this pie for our Easter dessert when I couldn't find the recipe I had intended to use. Be sure to take your time with this recipe because if you heat the mixture too quickly and don't stir constantly you will have scrambled eggs in your pie. Great recipe and will definitely use again and again!

this is the same recipe I used to use when I worked at a small restaurant in Indiana. It was loved by all...it is still requested by customers unfortunately now I ma thousand of miles away lol...DELISH!! and yep it's gotta be from scratch *grin*

This recipe is great. I made a coconut meringue pie from scratch for the first time using this recipe and it was awesome! My family really liked it and I did too.

this pie is the real thing . This is truly old fashioned, the same as when your grand ma made it .Anyone that knows coconut pie knows this is totaly yummy . double 5 stars .

This pie had good flavor but the consistency of the texture was off. The pie filling separated from the merangue causing it to slide off the top as I served it. I will not make again.

Pretty yummy pie. I didn't really like the consistency very much, though. Next time I'll have to do something to make it a little firmer, and I think I'll also chop up the coconut, so it doesn't have that chewy-coconuty feel. I think this recipe would also be great with a little coconut extract for extra flavor. I liked the simplicity of this recipe, so I'll probably try it again, but with a few alterations. Thanks!
