This was a fantastic recipe!! I have never tried to make a coconut cream pie before, but this recipe was a HUGE success!! I did make some of the substitutions mentioned - 1 1/2 C. coconut milk, and 1 1/2 C. half & half, as well as the 1/3 c. cornstarch in place of the flour. It came out great, and I will make this again and again! Thanks for a wonderful recipe!

I went with the coconut milk, half and half and 1/2cp of corn starch and this was by far one of the best pies I have eaten. Not to rich... just right.. loved it and will make it again for the family.

My daughter wanted this as her "birthday pie." It was FANTASTIC!!! I did substitute a 13.5 oz. can of coconut milk and a 12 oz. can of evaporated milk for the half and half. Otherwise, followed exactly. My dad said it was "exceptional" and he has been a pie lover for 73 years!! The custard was lovely and set up nice and thick, and not too coconutty, just right. We topped it with light cool whip, and that was perfect, not too heavy. A keeper!

This is my honey's favorite pie so, there was a lot of pressure to get this right! It was an absolute hit and I have to cook it for Christmas dinner. I did add a bit more coconut than called in the filling. It gave a smooth yet crunchy texture. Very enjoyable!

Definetly a good pie. I followed the other suggestions of using only part of the half and half and the rest a can of coconut milk. Then I used coconut extract instead of vanilla. I didn't think that it was too much of a coconut taste. The only other thing was that I couldn't get it to boil. I did it on low heat. The misture got REALLY thick. I tried to boil it but was afraid of burning it. It still turned out great and firm. I'm adding it to my recipe box!

Update. I made this again for Christmas and this time I used half coconut milk and half of the half n half. It was so delicious. My family said it was the best coconut pie they have ever eaten. I made the butter flaky pie crust recipe (this site) to go with it (very good) and made the homemade whipped cream (this site) as well. It was simply heavenly! This is a very good recipe. I actually didn't have any half n half or heavy cream so instead I thought I would try it with what I did have...2% milk. I thought it might be a little bland, but it was actually very good. I added 1/4 cup more coconut than the recipe called for, and it was gobbled up quickly by the myself and the kids.

I made this pie using some of the other reviewers suggestions! I used 1 can coconut milk and half n half to get 3 cups I used 3 egg yolks and cornstarch instead of flour! I also used a little coconut syrup and this pie was sooooo good! I will be making this again!

Yum...yum...yum. Fantastic recipe. Coconut cream pie is a favorite of my family. I usually buy them instead of bake them myself. No More! I followed Shea's suggestions and the pie was fantastic. However, there was enough filling to make a deep dish pie. I ended up with two 9" pies but my daddy got to take one home with a smile and he liked that :)

This is a great recipe. Follow the directions exactly. When preparing the filling, make sure that it comes to a boil. Not just a couple of little bubbles, a boil. Remove from heat add the coconut and extract and definitely let it set up in the refrigerator...overnight would be best. I like to use whipped cream, not cool whip. If you find a good recipe for whipped cream that will stand up overnight or longer, that would be best. I have not invested any time looking for this however it would be a good compliment to this recipe. I am not a cook, but mine came out great...many times (except for one). I did not bring the filling to a rolling boil (it will be thick). Becasue of this it was runny. If you bring it to a boil, it will be thick. I have also converted this recipe to a banana cream pie as well, it came out good, however coconut is better. Good luck.

This recipe is absolutely delicious! I did what the others suggested by replacing some of the half and half with coconut milk (I used a whole can) and replacing the flour with 1/3 cup of corn starch. The pie turned out beautifully.

I made this for Thanksgiving....My family thought this pie was soooo good! I just changed a few things, I used 1 1/2 cups coconut milk and 1 1/2 cups half and half, coconut extract instead of vanilla, and 1/4 cup flour and 1/4 cup cornstarch. Thank you for sharing.

I made four of these over the Thanksgiving holiday and everyone loved them! I used the cocoanut milk and half and half. I also thickened the filling in the microwave stirring about every 3 minutes. Great pie!

This is the best Coconut Cream pie I have ever had. So much better than Jello brand. It does take a little time, but you can't beat the flavor. I also did 1 1/2 C. each of half & half, and coconut milk, and instead of using flour, I used corn starch. I made the coconut custard in a double boiler, it turned out wonderful & it got rave reviews at Thanksgiving this year.

YUM! This recipe was delicious. I made one following the recipe exactly and one using the 1/3 cup of corn starch, 1-1/2 cups coconut milk and 1-1/2 cups whipping cream (omitting the flour and half and half). Both turned out yummy. I think the second one was a little more flavorful and rich though. Excellent!

I am a personal chef and had LOTS of pie orders this thanksgiving. I have a reciped I have been using forever, but thought I would try this one for one client. It got great feedback. I did make a mini one for our house and the rating was good. It will be a keeper.

Wow! This recipe was both easy and delicious. I also did 1 1/2 cups coconut milk and 1 1/2 cups half and half., and 1/3 cup cornstarch instead of flour. I microwaved it, even though I was nervious about that. It took about 5 minutes and I whisked it after every minute. I topped mine with whipped cream, but I may do a meringue next time. I am from Hawaii, so I know coconut, and this one is a keeper! The best thing is, with a pilsbury ready made pie crust, it's a 10 minute recipe with a homemade taste!
