I have made numerous recipes looking for one my husband likes. This is it. He loves this pie. I made it last night and there is one piece left this morning. I too substituted 2 c coconut mile and 1 c half and half as well as 1/2 c cornstarch instead of milk and prepared it in the microwave stirring every minute. Excellent pie!

Loved it, I went with the 1 1/2 of Half and Half and 1 1/2 of Coconut Milk. I also used the cornstarch instead of the flour. My only problem was when I was reducing it over the low heat, remember the long you keep it on there the thicker it will get. I think I left my on about a minute or so to long. My family liked it, but I thought it was to thick or rich. Next time I'll remove it sooner. All in all, I loved the pie.

THE best coconut cream pie ever. I made some of the recommended substitutions: 1.5 cups of half and half, 1.5 cups of coconut milk. Used cornstarch instead of flour and used whipped cream instead of cool whip (I can't stand that stuff). Made the custard in the microwave and it came out beautifully in five minutes, stopping to whisk every minute. This was a fabulous pie and I will make it many times again.

all though I'm not a coconut fan I made this for a coworker who was retiring he loved it several people wanted the recipe made another for the boyfriend who said it couldn't get any better I followed some of the other reviews and used coconut milk heavy cream and made my own whipped cream will be making again and again thanks for an excellant recipe

Really delicious and much easier than I imagined! I took the recommendations of using a can of coconut milk and then enough half and half to make 3 cups. I also substituted the cornstarch. Will absolutely make again!

This was the best coconut cream pie with the changes of replacing half of the half and half with coconut milk. I also used cornstarch instead of the flour. This was a wonderful and easy pie to make. It was 100% better the next day so try to make it the day before you need it.

This was a great pie I followed the other reviews with 1 1/2 h&h, 1 1/2 coconut milk and cornstarch. Pie came out great. This is the first time i have ever made or tasted a coconut pie. I will never wrinkle up my nose at the sound of coconut pie again. Great recipe with suggested changes by reviews came out fantastic first time.

This was my first attempt at coconut cream pie and it turned out great!! I followed other reviews and used 1 1/2 cups of unsweetened coconut milk and 1 1/2 cups of half and half. Be careful when you toast your coconut... I learned the hard way and burned it until it was black. Great pie and there wasn't a piece left. (My boyfriend's dad had 3 pieces!)

YUM! I made this a low(er) fat and calorie pie by using 1-1/2 cups fat-free Half & Half and 1-1/2 cups low-fat coconut milk instead of "regular". I was afraid it might not thicken, but it did :) I also used a Keebler shortbread crust - like a graham cracker crust w/o the overpowering flavor of graham cracker. I love coconut cream pie, but not the calories. Using one cup of Cool Whip Lite for the topping, the calories for the entire pie is 2,895 or 362/slice (1/8 of pie). The crust is high calorie, so skip the crust, serve in a bowl and 1/8 the pie turns into only 252 calories! :)

I doubled the recipe and used an 8 inch and a 9 inch pie plate. I easily had enough filling for three or four pies so I used the extra in some frozen tart shells. I used one 14 ounce can of coconut milk and skim milk for the remaining liquid to make six cups. I toasted my coconut because it releases more flavour. I could have cut the coconut by at least a third but didn't. I did reserve a 1/2 cup of the toasted coconut for use in the meringue topping I made. Meringue is very easy to make when using meringue powder and you don't waste your yolks!. Definitely a keeper considering a coconut pie at the bakeries around here are selling for $7 - $8.50.

Oh.my.goodness. If you are a coconut lover, this is absolute heaven. I only did two small things different. 1) I added half teaspoon of coconut extract, half teaspoon vanilla. 2) I shaved some frozen chocolate on the top. Even without these additions, this pie would have still been great. Oh, and by the way, if it's possible-this is even better the next day. YUMMO !

I made this for Mother's Day and it was a big hit! Did use half cocnut milk and heavy cream - worked wonderfully. Also definately recommend using microwave to make custard (if you have patience like mine!) - very quick! Thank you for a great recipe!!

My first time making a real homeade pie. I went exactly by the recipe. I wish now I would have looked at the reviews before because once the custard was done it tasted like flour. This was also for my husbands birthday which is tomorrow and now I have to go out and by a Marie Calendar coconut cream pie. Could it be that I didnt sift the flour when adding it? It didnt say to and I did go exactly by the recipe here. Stood over the stove for 30 minutes stirring until I got a light boil and it was thick.

This is the Best Coconut Cream Pie I have ever ate! You need to have Patience when you are cooking the filling, just keep stirring and keep it on low heat. I used 1 1/2 cups of half and half and 1 1/2 cups of canned coconut milk. I also used 1/3 cup of cornstarch instead of flour. Last, I used the recipe on this website for the "whipped cream" by paula. I just gives it the Old Fashioned taste and not the cool whip taste. I will never use another recipe for a coconut cream pie again. My grandmother says she thinks that it was better than her mothers!!!
