This pie was pretty good but not sensational. I LOVE coconut cream pie but was a bit dissapointed in this one. I made it as written with the exception of using just a bit more coconut. It had a great flavor but just didn't WOW! me. **UPDATE** This pie was SOOO GOOD the next day?! I have NO idea why it tasted better the day after, but it was excellent. So despite my previous review, this pie is really good!

You must make this pie! This recipe is wonderful! My husband asks me to make this like every other week! I was not a fan of coconut cream pies until I, unfortunately, made this recipe! Now I'm hooked! :) So I don't feel quite as guilty about eating a little piece here & there, I use fat free half & half and fat free whipped topping! So so so delicious!

I just made this pie today and was very impressed with how good it turned out. I like my pies a bit richers, so added an extra egg, 3 tblsp. butter to the cooked custard, 2 cups coconut and a bit more sugar. This pie is to die for!

I used 1/2 half and half and 1/2 Coconut milk. I also made the topping from beating 1/2 pint of whipping cream with 2 Tbs. powdered sugar and 1/2 teaspoon of coconut extract. My husband (who loves coconut cream pie) LOVED this recipe and says it is the BEST one he ever had!! Thank you so much for this recipe! It really made me look good :)

Coconut Cream Pie is my absolute favorite dessert. This is the first pie I ever made and it was perfect. I couldn't find coconut milk like the others suggested but I didn't want all the fat from the half and half so I used fat free condensed sweet milk. I added extra coconut since I didnt have the coconut milk or any extract. Lot's of wisking but it will get there I promise! My entire family was impressed.

I followed the advice of another reviewer using cornstarch instead of flour. I followed the recipe otherwise and found this to be a very smooth,rich, creamy and delicious pie! I made my own whipped cream instead of using cool whip and it only made this pie better if thats possible. I havent had a better coconut cream pie and I will make this one again!! Thanks for sharing your recipe!

My dad's favorite desert is Coconut Cream Pie so I made this for my parent's anniversary. They loved it -- it is so creamy and delicious! I'm sure my dad will be requesting this again!

I used the coconut milk and cornstarch along with fresh coconut and this is the best pie ever. Will make it for the in-laws and that's saying alot.

This is really a great pie. These are the 'tweaks' that I did. I used 3 egg yolks (saved the whites for meringue DH does not like the whipped topping)added 2 Tbs. butter, 1/2 tsp. coconut extract. Only had half and half,couldn't find coconut milk. The rest of the ingredients were pretty much the same. The ratio that I use for cream pies, based on 3 cups of milk,etc is 1 Tbsp. flour plus 21/2 Tbsp. cornstarch. Still makes for a creamy filling. I also added toasted coconut to the bottom of my baked pie shell plus 2/3 cup of flaked coconut to the filling then with the meringue topping I put 'lots' of toasted coconut on top and then browned in oven. Guess you could call this a triple coconut pie! Delisho-O

This is so delicious it is now my families favorite pie! I made it with the suggestions from others, I split the half and half with coconut milk and eliminated the flour with 1/3 cup cornstarch and I also reduce the amount of sugar to 2/3 cup which was plenty sweet enough. I swear it gets better everytime I make it!

This is 'the one'. It tastes like the ones you get at restaurants, but fresher, more decadent and sublimely rich. In my version that I'll be keeping in my recipe book I halved the half-and-half and used 1 1/2 cups of coconut milk instead, which brings out that coconut flavor for sure. I used flour instead of the 'suggestions' of using cornstarch with great results. I also made my own whipped topping (1 carton of whipping cream, 2 tablespoons confectioners' sugar, and 1 teaspoon coconut extract.) Also made the very simple 'Graham Cracker Crust' submitted by Janaan Cunningham here on Allrecipes. Honestly the whole pie took about an hour to make, with very little effort. It will impress for sure! My tip for making the filling, think of Dory from 'Finding Nemo', just keep whisking, just keep whisking. It will be about 25 minutes, but you'll feel it start to thicken up. Once it comes to a boil on low heat (once the bubbles break through, and it will take a little bit) its done. It should be thick like thick pudding. Just keep whisking! I should add I used a regular pot to cook it in and after pouring into the crust, it sat in the fridge overnight before I put the topping on.

The flavor of this pie was wonderful. This was my first time making such a pie and mine turned out a bit runny. I am still rating this 5 stars because it tasted amazing. I am pretty sure that I didn't cooked it long enough but if I were familiar making this sort of pie, I think I would have had a better idea of the texture I was looking for. I will be sure to try this out again. Thanks for sharing!

Fantastic recipe! I made mine into banana coconut cream pie at my dad's request on Father's Day, by adding 2 sliced bananas to the pie crust. I did use a homemade graham crust, as well I used 1/4 cup cornstarch instead of the flour. (You only need 1/4 cup... cornstarch is double the power of flour)! Also used half coconut milk and half 1/2 and 1/2 cream. Didn't toast the coconut inside the pie, just on top. Homemade whipped cream on top of course. Great recipe! I'm sure it will be requested again!

This was fantastic! I followed the advice of other reviewers and used 1.5 cups coconut milk for part of the half and half and used 1/3 c. cornstarch in place of the flour. I did this in the microwave and it came out beautifully. I used quite a bit more whipped topping than called for. I also toasted just the coconut that went on top. Thanks for a wonderful recipe!

This is such a delicious recipe! I made it two days ago for Father's Day, because it's my dad's favourite dessert. I've never made a cream pie before, but I made a few changes and substitutions and it came out perfectly! I didn't have half-and-half, so I used 1 can (1-1/2 cups) evaporated milk, plus 100 g of creamed coconut dissolved in 1 cup boiling water (as a substitute for coconut milk.) I used 1/3 cup cornstarch instead of the flour. I used 1 cup of unsweetened shredded coconut in the filling, and didn't bother toasting it. Unlike others, I had no problem getting the filling to set; it came to a boil within 10 minutes, and I cooked it only about 30 seconds longer, just to make sure it was thick enough. I used a frozen store-bought pie shell, and it was so shallow that the filling was enough for 2 pies, so I popped a second shell in the oven and filled it, too. Then I increased the whipped cream to 2 cups. Having two pies meant I could give one to my dad and keep one for myself and my roommate. Yummy!

This was fabulous....I followed the recipe exactly and it turned out well. After reading some of the reviews, I made sure to cook it a little longer after it started to bubble...it thickened up very nicely. I whipped fresh whipping cream, as I'm not to fond of cool-whip...I think fresh is better!!!!
