Old Fashioned Raisin Pie II

This pie 's sugary raisin filling is cooked up on the stove. When the raisins are plump and well-sugared, cornstarch and lemon juice is added. Then the thick, sweet filling is poured into a prepared crust and chilled. Serve with whipped cream.

The secret to this decadent, rich cream pie is that you 'll have to beat the ingredients into a froth, so use a blender. Half-and-half, whipping cream, butter, sugar, and an egg are whirred until smooth and perfectly combined. The filling is then poured into a pie shell, given a generous sprinkling of cinnamon, and baked until set.

This pie has a luscious, made-from-scratch lemon pudding, so you 'll need a double boiler. Fresh lemon juice and grated lemon rind are stirred into the thick pudding just before it 's poured into a pie shell. Then a meringue is whipped up and spread over the top, and the pie is slipped into the oven until golden brown.

The lovely chocolate custard filling in this pie is creamy and very chocolaty. It 's cooked in a double boiler until pudding-thick, poured into a baked pastry shell, and slathered with meringue. After six minutes in a hot oven, it 's ready to serve.
