This really was oh-so-good! My DH actually made it, and I'm convinced he followed his usual "little of this" and a "little of that" cooking method, but it still turned out amazing! He used white rice (that wasn't even fully cooked), threw in some black beans and served it on tostatas topped with sour cream and tomatoes! Yum! Thanks for a great, impossible to mess-up, recipe!

great recipe. After reading other reviews i decided to add some flavor by cooking the rice in chicken broth.(i used brown rice) i sauteed the chicken and mushrooms in garlic and olive oil. also added taco seasoning mix and i crumbled blue corn tortila chips on top before baking as suggested by others. will definately make again

Name says it all! I was actually surprised how well this turned out. It doesn't "look" pretty, but boy did we all scarf it down at dinner. My husband actually wanted to confirm I wasnt making anything the next night so we could finish the leftovers and my picky 2 year old ate it up! Like some of the other reviewers, I made some additions just to make it more hearty. I used brown rice and used only 1 cup. Added frozen corn, 4 sliced green onions, can of rinsed black beans, sliced black olives, and seasoned the chiken with taco seasoning. I served with additional sour cream and pico de gallo. YUMMERS!

This turned out a lot better than I thought it would. The only change I made was adding a can of chopped green chilis; used Southwest salsa and put in extra cheese. Served on tortillas with sour cream, cheese, green onion and black olives. The flavor was even better the next day. My husband and guest both really liked it a lot. It's a keeper. Thanks!

At first I only rated this recipe a three. But after having a second serving and having my husband try it, I give it a five. My husband said it kind of reminded him of the stuff that goes in stuffed peppers. He's not a big fan of mushrooms, but thought the mushrooms tasted great in it. This is a keeper and I'll make it again.

I made this recipe exactly as written except I used 2 cups of leftover chicken instead of 8 oz. fresh. My husband and I both liked it very much. I'll make this again as I almost always have the ingredients on hand. It was easy to make and tasty. Couldn't ask for more. One writer said that it didn't look appealing, but I though it looked OK. It had a nice browned top.

This was pretty good. I changed it up a bit to fit our meal plan. I used two packages of the pre-packaged Southwestern chicken strips chopped up. I used approx. 4 cups of cooked rice and added a can of corn and black beans to the mix. I used (2) jars of 8 oz. smooth medium taco sauce from Ortega as my family doesn't like chunky salsa. I omitted the sour cream from inside the casserole and we served this folded into flour tortillas with lettuce, sour cream, black olives, and refried beans. I would recommend trying this recipe!

A really good recipe and you can do so much with it like instead of chicken add taco meat or spread mixture on top of a Bobilli Pizza Crust and serve as a pizza, thank you for such a wonderful recipe. I will use again!

I put everything in that the recipe called for but also added more cheese, a small can of green chiles, beans & tortilla chips on top. I served it over corn bread. It was good...but even with those additions, it was a little on the bland side. I think adding 1/2 can of jalapenos and maybe some chili or taco seasoning would do the trick! The tortilla chips gave it a nice crunch.

This by itself is just okay. I doctored it up by adding some fresh garlic, cumin, salt & pepper, and also some corn & black beans. I served it with warm buttered tortillas and sliced avocado. All together it made for a yummy meal, but the dish by itself as-is is kinda plain.

This is a very good recipe, but the next time I make it I'll omit the mushrooms. Somehow, they didn't seem to quite fit with this recipe; but we did enjoy this overall, and I will definitely be making this again. Thank you for sharing this recipe.

I tried this with and without mushrooms, and it is definitely better WITH them! I also added a can of black beans, extra cheese, green onions, and fresh cilantro. Served it with avocado and warm tortillas - great, easy meal!

My Boyfriend and I loved it I am a massive cheese lover myself.It was great to come home to such a comforting meal. We are big vegetable fanatics so we ate collard greens with the dish(odd choice) but it worked well. He did deviate a little bit, instead of cooking the chicken all the way on the stove we cooked it until almost done, we added two types of mushrooms for more flavor(button and portabella). We added way more cheese and mixed it in after averything came off the stove before baking. Other than that this was phenomenal next time we are going to try addign some corn in the mix a nice vegetable to continue with the tex mex flavor. Thanks

great recipe, after reading reviews i omitted the mushrooms and added a can of drained black beans. i sauteed onion with my diced chicken and then added the beans, salsa, rice and cheese and put it in a casserole dish. i mixed 1 cup cheese with the rice and then covered the top of the casserole with cheese so it would get nice and melty! thanks for the recipe (didn't have sour cream, still great)

This was super yummy and easy! I added black beans, and Taco Seasoning (from this site) and I think I will add olives next time. I like this a little better than the Salsa Chicken recipe on this site Will be adding this to the rotation for sure.

I added corn and olives to the recipe. I also divided the salsa with half corn and black bean salsa and the other half black bean chipotle. It definitely could have used more salsa and more cheese.

This was an easy AND delicious recipe. I read some of the previous reviews and made the following modifications: -Coated 2 chicken breast in taco seasoning and baked. -Added black beans -Sauted mushrooms with onions & minced garlic. -Crushed chips on top & add Chedder cheese The next time - because there will be a next time - I will omit the mushrooms, they're really not necessary. Again, Great Dish!
