We love this recipe. I normally make it exactly as the recipe calls for but tonight I didn't have any sour cream so I substituted, I used ranch dressing in it's place and WOW it was even better.

Good recipe. I used skinned chicken quarters, covered them lightly with taco seasoning and baked at 350 for about 45 minutes, then cut up/shredded the meat. I mixed an entire 16 oz container of sour cream with about 6 oz of salsa (all I had on hand) and the remaining 1/2 the envelope of taco seasoning. I also added a can of black beans and a can of corn. I covered the dish with more shredded cheese shortly before it was done and served it with tortilla chips. Went over really well for my boyfriend, 12 and 7 year olds. Will make again!

Acutally, this dish tasted better on the second day; however my family enjoyed it. I have to play around with the spices (cumin, cilantro, another brand of salsa, ???) to give it a kick, but definitely a keeper. Thanks!

This is pretty darn good. I made it for a dinner party with Mexican cornbread and it was a big hit. Here are my changes: Didn't cook chicken or rice beforehand. Added 1.5 jars of salsa (to make up for the uncooked rice...it soaked it up), added a can of corn and can of black beans and a package of taco seasoning, baked covered for 1 hour @ 350 then added crumbled tortilla chips and shredded cheese on top then baked 20 mins uncovered. It was a big hit.

This was great! It made an excellent quick & easy lunch and a great way to use up some leftovers. I used a little less salsa then the recipe called for and it was perfect.

We loved this recipe. Its great just as it is. I have been trying to cut down on carbs and fat, so I cut the rice to one cup, instead of cheese I just put more salsa on the top. I also added some onion in mixture. This is a real keeper!!!

My husband said this one is a "keeper!" I used canned mushrooms, a can of cooked chicken, and black bean salsa (Cherith Valley Gardens brand), and sprinkled 4 or 5 drops of Tabasco sauce on top. So good!!

This was very good. I cooked the chicken in taco sauce like someone else recommended - this turned out well. I added black olives and next time I'll only use about a 3rd of the mushrooms recommended. I served this with corn. We ate off of this for 3 nights! Thank you.

This was very good. I used medium salsa (I may try hot next time) sharp cheddar cheese and instead of plain white rice, I used a chicken and herb flavored rice. Next time I make it I may add some broccoli florets. I felt like it was missing vegetables.

Just made this meal when I needed something fast for dinner that included chicken breasts. It's GREAT! And so flexible...I used a green bell pepper sauted in butter because I didn't have mushrooms. It gave the dish a great flavor..very poblano-like. I'm sure mushrooms are awesome in it too and I will try it next time. Definately add the crushed corn chips to the top, they add a nice crunch to an otherwise mushy casserole. Loved it and will make it again!

I used pasta instead of rice as well and it turned out nicely. I would agree with others that you can add other ingredients like olives, onions, tomatoes, etc. My husband loved this!
