Oatmeal Waffles

INGREDIENTS

  • 2 eggs, beaten
  • 2 cups buttermilk
  • 1 cup quick-cooking oats
  • 1 tablespoon molasses
  • 1 tablespoon vegetable oil
  • 1 cup whole wheat flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • Milk

DIRECTIONS

  1. In a large bowl, mix eggs and buttermilk. Add oats and mix well. Stir in molasses and oil. Combine flour, balking soda, baking powder and salt; stir into the egg mixture. If batter becomes too thick, thin with a little milk. Pour about 3/4 cup batter onto a greased preheated waffle maker. Bake according to manufacturer's directions. To make pancakes: Drop batter by 1/4 cupfuls onto a hot greased griddle. Turn when bubbles begin to form on top of pancake.

These were very good. My kids love them. These were heavy though. I think next time I'll use half dark wheat/half white wheat flour to make it a little lighter. Thanks!

This was delicious!! I added 1 TBS of wheat gluten to fluff it up. It worked. The kids and a hard to please husband loved them.

I'm doing Weight Watchers, so I was looking for a waffle that is high in fiber and relatively healthy. These came out delicious! I didn't even have to put any syrup on them, or any topping at all. They were great just plain. I followed another reviewer's suggestion and added 1 tsp vanilla and 1 tsp cinnamon. Great flavor and texture!
