Oatmeal Raisin Cookies VII

Ingredients

  • 1/2 cup butter, softened
  • 3/4 cup white sugar
  • 1/4 cup brown sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 3/4 cup self-rising flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 1/2 cups quick cooking oats
  • 1 cup raisins

Directions

  1. Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13 inch pan.
  2. In a medium bowl, cream together the butter, brown sugar and white sugar, until smooth. Beat in the egg then stir in the vanilla. Combine the flour, baking soda, cinnamon and salt: stir into the creamed mixture. Fold in the quick oats and raisins. Spread evenly into the prepared pan.
  3. Bake for 10 to 12 minutes in the preheated oven, until the edges are starting to brown. Let cool in pan before cutting into bars.
