I doubled the cookie recipe but not the filling and it was just right. It made about 30 good sized sandwich cookies and they were WONDERFUL!! I agree, the cookies are good by themselves but the filling made them even better!

These cookies are excellent! The only change I made was to use skim milk instead of cream in the filling(worked great). Also, I made them smaller then specified and was able to get 48 cookies out of the batch (24 fully assembled). I had to flatten them slightly before baking as they would have stayed puffy if I hadn't. I use a stoneware pan whenever I make cookies. Just make sure you cool it down between batches. I've had many requests for this recipe!

Wonderful cookies! I doubled the recipe like was suggested in other reviews. My family loved the crunchy cookie and the soft and fabulous filling! A keeper. Be sure to keep some milk on hand though!

Really good tasting cookies. I prefer just stright peanut butter cookies. The oatmeal gave it an odd texture.

These cookies were good, I felt that the filling was a little sweet. I made some cookies without the filling and they were just as good. COOKS NOTE-- these cookies spread while baking. My first batch were huge.

These are so good, and boy are they sweet. We can only eat one of these. Maybe that is a good thing! I doubled the cookie and icing recipe and got a whole tin full which I have frozen.

For those of you not having as many cookies as the recipe states, you are making them the wrong size. You need to make them by the teaspoon, NOT a standard cookie baller. If you do, you will have the noted quantity. These turned out faulous. Everyone raved about them. Next time I'm going to cut the filling in half since I had plenty left over. And there WILL be a next time. So easy to make and so delicious.

Super yummy! I am not a huge PB cookie fan - however, the addition of oatmeal is amazing in this recipe!! I followed the recipe exactly, but opted not to do the icing...AWESOME!!! Will make these again and again!

I inadvertently doubled the butter in the cookie (not the filling) and drizzled the assembled cookie sandwiches with melted semisweet chocolate. The resulting cookies were very crisp and Delicious. My guests raved about them. The filling is so good, I might double it next time around.

These are very good. I had a "yen" for something peanut butter and saw this recipe.They are so good, I didn't bother with the filling. I'm the type of person that usually picks the frosting off cakes and doesn't eat it, same with sandwich cookies, I don't usually eat the filling. A mighty fine peanut butter oatmeal cookie as is with a glass of milk.

These are amazing! Amazing. It's true they don't make a lot (I got 18 total) but what you get is fantastic! I added 1/2 tsp of vanilla to the filling but otherwise made as written. I baked for 8 minutes and that was perfect. They stayed soft too! I personally used every bit of filling and had none left over. I can't wait to try them dipped in chocolate as one reviewer suggested.

This were excellent. I used margarine, not butter. Although I would have had about 15 sandwiches, only had 11 by the time I got around to making the frosting. They were delicious without and even better with! Had plenty of filling. Can't wait to try one reviewers idea of dipping them in chocolate
