I've never gotten around to making these with the filling, but everyone loves them on their own! Everyone who tries them comments on how addictive they are and keeps coming back for more! Somehow these manage to taste even more peanut buttery than regular peanut butter cookies. A must-have for peanut butter lovers everywhere!

Excellent peanut butter cookie recipe - best I've tried so far. Read previous comments and doubled the cookie recipe, but not the filling. Glad I did, as my boyfriend thought the cookie sandwitches were good, but preferred the cookies, sans filling. As well, only baked the cookies for 8 minutes. this way, they stayed really soft and chewy after they cooled. Ended up using half of the cookie batter and froze the rest. Just finished making cookies from the frozen dough. The dough froze really well and the cookies turned out great. Again, made half into sandwitches and the other half as 'regular' cookies, as we prefer the 'regular' cookies oven warm, but the cookie sandwitches are much better cold. This will become my standard peanut butter cookie recipe.

This was an absolutely fantastic oatmeal peanut butter cookie recipe. I made a double batch from the get-go, being that we're a family of five and some of the reviews suggested that the recipe didn't yield a lot. Let me tell you, these cookies went fast! Delicious, rich, a nice moist cookie unlike some of the peanut butter cookie recipes I've tried that end up dry and crisp. This is most definitely a keeper!

My son has a peanut allergy, so I made this with soy butter instead. It still came out wonderful!! My husband took two dozen to work with him and they were gone in less than 15 minutes!! Thanks for the recipe!!!

these are very yummy! a nice treat from the original PB cookie. I might try to use the filling recipe for cupcake frosting, it would be great on top of chocolate cupcakes that are not too sweet.

Being allergic I couldn't taste them, but everyone (save a non-lover-of-peanut-butter) said they were great. They were gone in a flash! Would make again, easy to make. Double filling at least...better thick ;)

These are FABULOUS! My son loved them. Would not recommend making them without the filling, although they are delicious either way. Took these to work and everyone loved em! Will be making these again soon.

This is a quick and easy recipe. A few tips: ensure the butter is room temperature, if you use SALTED butter there is no need to include the 1/2 tsp. of salt, use a medium cookie scooper, and only bake the cookies for 9 minutes.

I couldn't stop eating these. They ended up expanding in the oven, so I was quite surprised at how big they ended up being. So measure the recommended amount of dough onto the cookie sheet. I baked 2 batches, and the first ones were kind of burnt, so it's best to keep an eye on them and take them out right when they look ready.

This is a great cookie recipe. I made them with almond butter (because I needed to get rid of it) and added a handful of chopped almonds - extraordinary! I didn't make the filling but they were delicious just on their own. Will definitely make them again!

Absolutely delicious. I dipped them in milk chocolate and love that chocolate peanut butter together flavor. I dropped by teaspoon and got 33 nice size cookies.

I just finished making these cookies and they turned out very well. The cookie itself is chewy and delicious, and that was baking for 8 minutes. Based on the other reviews, I doubled the recipe (both the cookie and the frosting) and had just enough. I used a teaspoon which made the perfect size and a double batch made over 50 sandwiches (I'm not sure of the exact number since my husband ate some!). I tried using a pastry bag for the filling which worked okay until the tip came off. I think it was because my frosting was very thick. I even used extra cream. So I ended up using a knife, which worked fine and was less work than the pastry bag. I'll bring them to work tomorrow so we'll see what my coworkers think!

WOW!! Excellent recipe! These cookies taste like a Nutter Butter or Girlscout cookies, but better! I have made these MANY times and everyone BEGS me for more.. and what's more, I refuse to give them the recipe! I actually lie and say that I made it up myself.. lol. I'm sure I'm not the only one around here who does that! This recipe is pretty tried and true.. I don't alter it in any way. As listed here it doesn't make too many cookies, so if you're just making cookies for yourself then this is fine. But if you want to give them away or have a family you will NEED to double or triple the recipe. Variations: I do have a few variations of this recipe you might want to try... First is the frosting, instead of using the heavy cream, I just use butter, peanut butter and powdered sugar, this makes the filling a bit more thick n rich.. which I love. Also, you can ad some cocoa powder to the filling to make it chocolate.. only use maybe a tablespoon of peanut butter, then add a couple tablespoons of cocoa powder to the butter/cream mixture. then sweeten it with powdered sugar.. it's good! Also, when filling the cookies, you can just dab on some of the peanut butter filling to only one side of the cookie, and on the other side spread some strawberry! I make this by mixing some equal parts butter and jelly together, then just a tad of powdered sugar. This is SOOOO good, tastes like a sweet peanut butter and jelly treat! These are the best! My hubby is a die hard chocolate chip cookie fan but I am sooo tired of that recipe. I tried this and he loved it! Said it really was like nutter butters. I did not even get a chance to fgill them but I might try a small scoop of icecream and freeze them yum:-)_

Made this (X4) yesterday but didn't fill. Added mini semi-sweet choc. chips(1-1/4 cups) and had to grind up 'Orig.' oats as didn't have Quick. They are AWESOME!! Using my 1-1/4 inch diam. cookie scooper, got 140 cookies out of this batch. Will throw away all other peanut butter cookie recipes.

These are the best Peanut Butter cookies I have EVER had. I would suggest that you make them very small. I made 15 large cookies and it was too much by the time I filled them. I am making them again today and I will make them as the recipe suggests...using a teaspoon. My husband said they were great without the filling so I would also suggest leaving a few without.
