These cookies are insanely delicious and decadent. I used all natural peanut butter for both the cookies and frosting and it still tasted delicious. I made a couple of changes to the frosting just because of what I had on hand. I used about 1/3 stick of cream cheese, 3/4 cup of powdered sugar, 1/2 cup of peanut butter and a tbsp of cream. I'm sure these are just as awesome with the suggested frosting but I wanted to use up some cream cheese I had. I would also make sure to flatten the cookies because they won't flatten totally without doing so. I dipped my fork in sugar so it wouldn't stick to the cookies. I also found no need to refrigerate the dough. Thanks so much for this recipe. I can't wait for my family to try them.

So easy and so yummy! For an even easier filling just use peanutbutter and honey. In some stores (Kroger's store brand) you can buy it already mixed in a jar!

These were by far the best peanut butter cookies ever. Next time I will add more filling, I think it makes a difference.

10 TIMES BETTER THAN GIRL SCOUT COOKIES! I made these over the holidays & they were a HUGE HIT. We just picked up my daughter's Girl Scout cookies & I opened a box to compare...GS's are dry & hard (blah.) These are super soft & the cream melts in your mouth. They are my new favorite cookie & that's saying alot since there is no chocolate in them. TIP: Use a 1 1/4" mini ice cream scoop to make smaller cookies. That way when you sandwich them you get more per batch. Be generous with the filling too!

Crazy good!! I changed the amount to yield 18 cookies and still got more than that, probably around 30 "sandwiches." Definitely a keeper.

I did what some of the other people here did and doubled the dough recipe, but made the filling as is. That way, it made more than about 20 cookies. This recipe is quick and delicious, and my boyfriend promptly ate almost all of them.

I have made these several times now and this is a very good cook recipe it has a nice peanut butter favor my family really enjoyed them. I did make a couple of small changes; i put the oats through my food processor and pulsed for a few seconds becasuse the kids said they were chewing oats when they bit into the cookie...i also cut the sugar down to a total of 3/4 cup between the brown and white sugar and they are perfect.

I love this cookie!! My husband and kids love this cookie. I make batches (some as is, some w/ choc chips), drop spoonfuls on cookies sheets and freeze the dough balls for later. My kids adore coming home from school and having just a plate of warm oatmeal pb cookies waiting for them.

So good! I made them for my friend for Christmas and I might take some to work for out potluck...maybe I might keep them for myself!. The only thing I wish I could figure out how to make them more bite size I think they would be better if there wasn't so much in one cookie.

These cookies are so yummy!! I am not a peanut butter fan but I could eat these by the batches! The family loved them too and they were incredibly easy to make! I used a pizza stone to bake them on and I needed to cook them a couple minutes longer but otherwise I followed the recipe. Hubby says better than Nutter Butters because they aren't dry! YUM!

they were great. half the iceing is plenty for a batch if you don;t like them to sweet. I used crisco so they were soft and of the 36 i made only 3 broke. When they first got out of the oven they looked to puffy no fear they flattened nicely. I would make again as they look fancy but are easy to make

DELICIOUS! Every person that I gave these to for Christmas loved them. I made sandwhiches out of one batch, and left the 2nd batch just plain cookies and they are really good without the "icing" as well. Yum!

Made these without the filling to save on time & calories. They are very good but next time I will definitely cut down on the sugar and add ginger, cinnamon & other spices just to give them a bit of *zing*.

These cookies were incredible! I took the advice of a previous reviewer and doubled the batch, but not the filling. This was excellent advice. I also took her advice and pulled the cookies out at exactly 9 minutes (she said 10 but I used a convection oven which is often quicker). I let them sit on the baking sheet for approx. 5 minutes before removing and they were PERFECT! I would highly recommend these for easy, quick cookies that everyone will love. It took very little time to fill them, so don't let that scare you off!
