INGREDIENTS
1/2 cup shortening
1/4 cup molasses
1 egg
1 1/2 cups all-purpose flour
1 cup sugar
3/4 cup quick-cooking oats
1 teaspoon baking soda
1 teaspoon ground ginger
1/4 teaspoon ground cloves
1/4 teaspoon salt
Additional sugar

DIRECTIONS
In a mixing bowl, cream shortening, molasses and egg. Combine dry ingredients; stir into creamed mixture. Roll into 1-in. balls; roll in sugar. Place on greased baking sheets. Flatten slightly with a flat-bottomed glass. Bake at 350 degrees F for 10 minutes (do not overbake).

These cookies were excellent and much easier to bake than many other ginger cookie recipes! I used butter rather than shortening. My only suggestion would be to bake about 9 minutes, then let them cool on the pan for another minute before removing to a rack.

These are so good. They are very sweet and super thin and crispy. They were too sweet for me, but my husband and kids LOVED them. Exactly what I was looking for.

This is now my favorite cookie recipe! After they cooled on the wire racks, the edges became a little hard. My family and I like soft, chewy cookies so I stored them in an air tight container with a slice of bread and in a few hours, they softened again. These are easy to make and look pretty too!
