Ingredients

  • 1/2 cup butter or margarine, softened
  • 1/2 cup sugar
  • 2 eggs
  • 1 cup mashed ripe bananas
  • 3/4 cup honey
  • 1 1/2 cups all-purpose flour
  • 1 cup quick-cooking oats
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt

Directions

  1. In a mixing bowl, cream butter and sugar. Add eggs, bananas and honey; mix well. Combine dry ingredients; stir into creamed mixture just until moistened. Fill paper-lined muffin cups two-thirds full. Bake at 350 degrees F for 18-20 minutes or until cupcakes test done. Cool in pan 10 minutes before removing to a wire rack.
