Ingredients

  • 1/2 cup shortening
  • 1 cup sugar
  • 2 eggs
  • 1 1/2 cups mashed ripe banana
  • 2 cups all-purpose flour
  • 1 cup quick-cooking oats
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 cup miniature semisweet chocolate chips

Directions

  1. In a mixing bowl, cream shortening and sugar. Add eggs, one at a time, beating well after each addition. Add bananas; mix well. Combine flour, oats, baking soda, baking powder and salt; add to the creamed mixture, stirring just until moistened. Stir in chocolate chips. Pour into a greased 9-in. x 5-in. x 3-in. loaf pan. Bake at 350 degrees F for 60-65 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes; remove from pan to a wire rack.

I liked the taste and texture of the bread, although it was crumbly. I would have preferred it... MORE
