1 1/2 pounds lean ground beef
1 (12 ounce) can tomato paste
3 cups water
2 (1.5 ounce) packages spaghetti sauce mix
1 tablespoon sugar
4 teaspoons dried parsley flakes
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/4 teaspoon pepper
2 eggs, beaten
1 (16 ounce) package dry cottage cheese
2 cups shredded Cheddar cheese, divided
2 cups shredded mozzarella cheese, divided
1 (16 ounce) package lasagna noodles, uncooked

DIRECTIONS
In a large saucepan, brown ground beef; drain. Add tomato paste, water, spaghetti sauce mix, sugar, parsley, salt, garlic powder and pepper. Simmer, partially covered, for 20 minutes. Stir occasionally. In a bowl, combine eggs with cottage cheese, half of the Cheddar cheese and half of the mozzarella. Set aside. Spoon one-third of the meat sauce into a 13-in. x 9-in. x 2-in. baking pan. Place half of the uncooked noodles over sauce. Top with one-third of meat sauce and press down. Spoon cottage cheese mixture over all. Cover with remaining noodles and meat sauce. Cover and refrigerate overnight. Bake, covered, at 350 degrees F for 1 hour. Uncover; sprinkle with remaining Cheddar and mozzarella cheeses. Bake an additional 15 minutes. Let stand 10 minutes before cutting.

I made this recipe for my in-laws while I was in Canada. I was looking for a quick and easy lasagna recipe and this is it!! I also knew I couldn't go wrong with a recipe from a fellow Nebraskan! Go HUSKERS! I used a can of spaghetti sauce rather than the envelopes and I didn't realize that I had to refrigerate it overnight. I didn't wait- I just I baked it right away and it was delicious!!! I got several compliments. In fact I am freezing another batch tonight for my father-in-law.

This recipe was very easy. Like many others, I did not refridgerate before baking. I followed the recipe exactly except I substituted Boca ground beef instead of the real thing. It turned out great and the leftovers were even better the next day! I will use a jar of sauce next time though. I was not familiar with the envelope kind and wished I had used a jar.

I am dying to make this recipe and I already know from my other lasagna recipe that the secret ingredient is the spaghetti sauce mix- just delicious. But alas I have been to four grocery stores and cannot find this anywhere-I used to buy Spatini. Help anyone!!

This was the very first time I made lasagna and it was much less painful than I thought it would be! Followed the recipe except used the only meat I had on hand, one pound of ground turkey. One noodle was undercooked for some reason but other than that FABULOUS, my dinner guests loved it.
