Italian Rice Pie II

This recipe makes two sweet rice pies, a dessert traditionally served on Easter by many Italian families. But it's not unknown for the pie to be made year-round as well. 

No Crust Coconut Pie

The filling in this pie is made with milk, sugar, eggs, butter, self-rising flour, and coconut. All the ingredients are stirred together, poured into a 10-inch deep-dish pie plate, and baked.

This traditional Easter dessert is made with lots of eggs, heavy cream, ricotta, rice and crushed pineapple. This lovely filling is poured into a large 9x13-inch pan, baked and served chilled. 

No Crust Strawberry Pie

It 's hard to beat this pie that has no crust and hardly any calories. Arrange whole strawberries in the bottom of a 10-inch pie pan and top with a yummy vanilla pudding and strawberry gelatin concoction. Chill and serve with whipped topping.

To make this pie 's creamy, delicately-flavored filling, combine eggs, ricotta, milk, vanilla, sugar and cornstarch, and then pour it into a prepared crust. Bake the pie for an hour until it 's set. Serve with sweetened, sliced strawberries.

This pie 's filling is made with evaporated milk so it 's very creamy, and the whipped egg whites folded in at the last minute make it light and airy. A bit of fresh lemon juice adds a refreshing taste to the finished pie. Decorate the top with sliced kiwi and strawberries. This recipe makes two 9-inch pies.
