Wow!! SO delicious!! I made the following changes: (1) cooking spray instead of butter; (2) substituted veggie broth; (3) used 5 small-ish golden potatoes; (4) added sage; (5) 1c lite soy milk and 1.5c non-dairy cream substitute; (6) no ham; (7) added carrots and brocolli to the original onion/celery saute; (8) after combining the saute to the boiled potatoes and spices I took about 1/3 of the mixture out, pureed it in the food processor and added it back to the pot. All of this = one of my favorite recipes!!

I think this is a great recipe. The flavors are wonderful. I think the secret is cooking the potatoes in the chicken broth which gives the soup more flavor. I used low sodium chicken broth, and I used yukon gold potatoes. Yukon golds have a sweeter softer texture and they are wonderful in this soup. I did think that perhaps using 1/3 cup flour might have been too much as my soup was rather thick. That was easy to fix just by adding a bit more milk. I would recommend anyone that is unsure about the spices to just start with using half, and then when your potatoes are done, you can taste the soup and see what you think, before adding more spices. I would also recommend making sure that you are using chicken broth that you have taste tested first, as this is the base of your soup. I thought the recipe was great just as written, with the exception that perhaps there was too much flour.

This soup is fantastic. I accidently switched the serving number and ended up making enough for 15 people!! Glad I did though, this soup won't last the week!! Thanks for a great recipe!

We were all very pleased with this soup. The only thing I changed was I smashed the potatos a little at the very end. This made it a little more creamy.

This recipe is just great. I did add a little bit of whipping cream and chopped the potatoes into small cubes, my boyfriend suggested that I don't mash it up and it turned out great. mashing up the soup hides all the different tastes from the ingredients... Thank you loads for the recipe.... we just cant get enough of it!

Great soup, simple to prep. Also I added two (2) Sweet potatoes, cubed. as well as one (1) carrot matchstick thin pieces. the original recipe is great but i enjoyed the changed so i thought i would share it.

Great taste, used Olive oil to saute onion and celery, and low fat milk. Only had lemon thyme, but that was a great addition.

This was super good and is very easy to make. I started this before checking my pantry and realized I was out of rosemary - but the soup was still delicious. I didn't use chicken broth, but instead used chicken boullion. I also left out the peas. The soup was very, very thick and everyone just loved it (kids included). Thanks!!

I loved this, and it was very easy to reduce the fat content without sacrificing taste. As another reviewer suggested, I used cooking spray instead of butter and used 1.5 cups of 2% milk, which was more than enough to reach a very creamy consistency. I also doubled the broth and the rosemary and threw some crumbled bacon on top for my fiance. Perfect!

Even little kids love this, thanks to the ham. I sauteed carrots with the onion and celery and substituted broccoli for the peas. Delicious!

This soup was delicious and super easy! I ran out of milk and had to mix cream with water for some of the recipe, but it turned out great. It made enough that we had leftovers and it was still good after a couple of days.

I love this recipe! I was looking for a more basic recipe, so I omitted the peas & ham. I also added 2 cloves of garlic for good measure. I love the flavor that the rosemary & thyme add. Great recipe! Thanks for sharing.

This is a wonderful wintertime soup with a restaurant quality. I love the unique flavor and my family likes it too. A great way to use leftover ham! I make it just like the recipe says.

delicious! as always, trying to make things a little healthy, i cut out the butter (used cooking spray) and added about a cup of shredded carrots and a package of frozen broccoli florets that i cooked and then pureed. after the carrots and potato were boiled soft, i blended the whole mixture in the blender- it was so creamy, i only had to add 1 1/2 cups of 1% milk. throw a little low fat shredded cheddar on top-yummy!

Excellent! All the richness of a cream soup without the heavy cream. I used another reviewer's idea of adding a grated carrot for extra nutrition and color. Also, since I didn't have any ham, before sauteing the onion, celery mixture, I fried four pieces of bacon in my stock pan, poured off the grease, and continued with the recipe, adding the cooked, crumbled bacon with the peas at the end.

Great tasting soup! I followed the exact recipe, except I used fresh thyme, instead of dried. Fabulous flavor! Will definitely make this again! I love how it was so thick, yet there wasn't any heavy cream in it!

this was good something a little diffrent but it was not for my family they did not care for the thyme and rosemary, but I loved. thank you.
