Neptune's Favor

"A base of spinach is covered with a mushroom, onion, and hard cooked egg sauce, then topped with snow crab and Swiss cheese. My grandmother passed this recipe to me, she always made it with artificial crab chunks. Yummy!"

INGREDIENTS (Nutrition)

  • 2 (10 ounce) boxes frozen chopped spinach, thawed and squeezed dry
  • 1/4 cup mayonnaise
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 3/4 teaspoon salt
  • 1/4 teaspoon paprika
  • 1/8 teaspoon crushed rosemary
  • 1/8 teaspoon dried thyme leaves
  • 2 tablespoons grated onion
  • 1/2 (4 ounce) can sliced mushrooms, drained
  • 2 hard cooked eggs, chopped
  • 1 pound cooked Alaskan snow crab meat
  • 1/2 cup shredded Swiss cheese

DIRECTIONS

  1. Preheat oven to 350 degrees F (175 degrees C). Butter a 8-inch square, glass baking dish. Place spinach on the bottom, and around the sides of the prepared baking dish.
  2. Stir together the mayonnaise and flour in a sauce pan. Stir in the milk, and season with salt, paprika, rosemary, and thyme. Add the onion and mushrooms; bring to a simmer over medium-high heat. Cook until thickened, stirring constantly. Stir in the eggs, then pour into the baking dish. Sprinkle with crab meat and cheese.
  3. Bake in preheated oven until cheese has melted, about 20 minutes.
