Natalie's Amazing Irish Potato Soup

Directions

  1. Melt butter in a soup pot over medium heat. Cook and stir celery, green onions, salt, and black pepper in melted butter until slightly tender, about 5 minutes.
  2. Stir potatoes, chicken broth, and water with celery mixture. Bring to a boil over medium-high heat, cover, and lower heat to a simmer until vegetables are softened, about 30 minutes.
  3. Stir cream of celery soup, cream of chicken soup, milk with the potatoes mixture. Season with salt and pepper. Cook until heated through, stirring occasionally, 5 to 10 minutes.

Hi, Thank You !!!!! Yes, I did change to my taste.(but not by much.) Peeled celery as I alway's do. Added small amount of Ham. SUPER !!!!! A REAL Keeper !!!! Tiggy1

This was an excellent recipe. I didn't use a bag of hash browns because I don't like foods that have preservatives and other added ingredients, so I used about 7 smaller potatoes and shredded them on a cheese grate. I also didn't have enough milk on hand so I used about a cup of half and half and a cup of milk. Even with those small changes, it was very tasty. Will be making this again!
