This makes a great tasting cole slaw the day after you make it. It was just OK the first day but improved with age. I, too omitted the pimento and used half green pepper and half red. I misread the recipe and used cayenne instead of chili powder but it was a happy error. Thanks Judy, this is a keeper.

Loved this slaw and it's low in calories. I also added some broccoli slaw and left off the pimentos and used red bell pepper. Will definitely make this slaw again.

When I first made this cole slaw, I didn't think that it had enough dressing, and I didn't much care for the taste immediately after mixing it. However, after letting it chill overnight, I was really impressed. The dressing set in nicely and it had a little bite from the cider vinegar and chili powder. I left out the pimentos and had shredded carrots in it from a premade mix. Great recipe! Only giving it four stars because my wife tasted it and immediately said, "Not my thing" so I'm not sure this will appeal to everyone.

Wonderful twist to an old favorite. It is easy to adjust the heat to your preference. I thought the chili powder was a nice kick and balanced with the pimentos.

I used 1/2 of an onion and 1/2 of a green pepper and added a spoonful of white sugar to counter the potency of the onion. Yummy!

This is the best cole slaw i've ever fixed. It's great for anyone with diabetes because there's no sugar. Thank you Judy for sharing this most wonderful recipe. My whole family loved it, and believe me, they are very hard to please.
