I modified it by adding plain yogurt and adding baking soda as past reviewers stated. I couldn't get mine to rise that well, but it still turned out decent. I would definitely recommend pan frying instead of baking. Baking leaves it too coarse with little flavor. I didn't have a grill to use so the pan served me well.

Great Recipe. Have made many different naan recipes, and this is by far the best. Time to build a tandoori oven! A few tips: (1) I used special white flour, which is similar to bread or pizza flour. (2) I kept the dough moist, because the flour absorbs a lot of water during the rising phase. (3) I cooked mine over charcoal. I had a charcoal BBQ and hook up a small fan to get it burning really hot. I placed a cast iron grill over it, turned the fan off, put the naan on and then put a large lid over the top. It was the best I could do to simulate a tandoor. Anyway - they cooked in 60 seconds and tasted fantastic - complete with lots of bubbles and a great texture. Luke

Alright, so I just recently got an allrecipes account, but I have been making this recipe for over a year. THIS IS GREAT. I always leave out the garlic, but other than that, I follow it exactly and get GREAT results. Everyone always raves about it! On the stovetop or the grill, this is a truly tasty treat that goes with any meal. It's not much like the usual naan, like the kind you get in restaurants, but these puppies are good. :)

I've made this recipe several times. It's excellent. Labor intensive, but well worth the work. My husband had never heard of naan. I've now got him hooked on naan and my homemade hummus. The only thing I change is to melt the garlic into the butter rather than folding it into the dough. I have only cooked them on a cast iron skillet. I can't wait to try it on a grill sometime.

Simple tasty recipe. Explore variations of seasoning if you like. I enjoy a splash of onion powder and a pinch of cayenne in the dough. Chopped cilantro or parsley can be added too. I use yogurt instead of milk because I like that tang. Double up on the recipe and store extra dough in the fridge for the next day! Nothing else will do for the family once they have tasted this bread though. I use a tortilla press to flatten the dough before cooking, works well and goes much faster than rolling it out, also you don't dry it out with all the extra four needed for rolling.

I wanted to address the poor ratings. I've tried several varieties of naan, and I have found this recipe to be the test, even better than the recipes on the Indian recipe guides. I wanted the stress the importance of the flour. I tried making the Naan a couple of a weeks ago with all-purpose flour, and the naan turned out too chewy, hard, and tasted like an over-boiled garlic pancake. I would suggest to use only white flour- this may be a disappointment to those that want a more healthy option. If you want the healthy option, skip the ghee. I just made another batch of naan, and it turned out perfect. The difference? I used flour that was marked as "Bread Flour". The way the flour is treated really makes a difference, folks. Another tip: the ghee really makes the naan, taste, well, like Naan! Ghee is not JUST melted butter and garlic, its prepared in a very different way. I suggest anyone that wants an authentic naan at home to go to an Indian store and buy some ghee, and the flour you use makes a difference. I noticed one commentator talked about not being able to roll-out the dough well enough, this, again, is a sign of not letting the dough rise enough and the dough not being well-oiled, and the flour that was used will influence it as well. Great recipe. To get the real naan bread taste, you need to add about 1/4 tsp of crushed kalonji. With that addition, this is perfect.

These were amazing! I used a stovetop grill, and they turned out really well. This works well to make falafel wraps. "Sean's Falafel and Cucumber Sauce" goes great with these. I added about 1/4 tsp. of baking powder and followed the rest of the recipe as is. Thanks for the great naan!

I added 2 teaspoons sugar to the water and yeast. I added the garlic in with the other wet ingredients (not after the first rise). I like mine really garlicky, so next time I will add A LOT more garlic (both powder and minced from jar). I didn't have bread flour so I used all-purpose flour and added 1/2 teaspoon of baking powder. I found 4 cups of flour was plenty. I made my dough balls about the size of 1 1/2 golf balls. I also discovered that I needed to roll them with a rolling pin to the thickness of a thick tortilla. They puffed up nicely with little brown spots and bubbles. I found that the longer the rolled out dough sits before grilling, the more bubbles puff up.

This is a great recipe, and here's a helpful hint for storing your unused naan in the freezer. We make a whole batch, cook it up in a grill pan, then freeze it. It is not 100% as good as fresh, but if you are a family of two, it is a great way to have 95% as good as fresh naan for a few weeks.

Wonderful. Had this for Indian night and this helped deal with the spicy food. I followed the original recipe but I cooked it in a skillet and I noticed that some of mine had problems rising at first. I solved this by first adding butter for a nice taste then adding the butter side to the skillet, letting it cook slightly, just enough time to butter the other side, then flip it over. I flip it over a couple of times to help it along, however, burning it actually gave it some really good flavor. Oil helps as well. Next time I'm adding more garlic into the dough because I'm a fan of garlic.

I didn't use the grill to cook the naan. I did like the recipe and will make it again. I did add 1 tsp sugar to the yeast before adding the additional ingredients. I would make the balls bigger next time. The pieces of naan ended up being the size of a small pancake.
