My Nancy's Pizzelles

"A spicy pizzelle cookie for using with a pizzelle iron."

INGREDIENTS (Nutrition)

  • 9 eggs
  • 2 1/2 cups white sugar
  • 4 teaspoons ground cinnamon
  • 3 tablespoons baking powder
  • 1 1/2 cups unsalted butter
  • 5 cups all-purpose flour

DIRECTIONS

  1. In a large bowl, beat eggs, margarine and sugar together. Stir in the flour, baking powder, and cinnamon to form a sticky dough.
  2. Preheat the pizzelle iron. Drop cookie dough by rounded teaspoonfuls onto the hot iron close the lid and cook for 1 to 2 minutes. Steam will stop coming out of the iron. Place cookies on a wire rack to cool.
